The history of macaron
If the famous colorful and tasty "Parisian macaron" is the real symbole of the finest French pastry, the original macaron however find its origins in the old Italia.
Invented by monks in the VIIIth century these little dry cakes named Amaretti which at this moment are it is first only some basic cakes baked with almonds.
In France, since the Middle Age the origin of the macaron appers under the shape of little dry amonds cakes also baked by monks.So how did this simple biscuit end up in France and turned into the famous macaron we know today? Well, it seems that Catherine de Medici (1519-1589) who loved to savor it (or them) Firenze when she was a child brought the recipe to the Cour when she married to the Duke of Orléans, future King of France Henri the Second.
By time, this recipe be spread and adjust in many French villages and cities e.g. Amiens, Nancy, Reims, Niort and many more. Which will given various variations of macarons which the recipe and the shape often depend in function of regions.
The Parisian macaron as we know it today, would appear first time in 1830 in Paris when Parisian pastrymen have the brilliant idea to "glue" two pieces of macarons together with a filling a ganache or a jam. But this is Louis-Ernest Ladurée which in 1862 popularize it in naming it "Parisian macaron" et voilà … a classic was born !
